Soo I’ve seriously been pounding the pasta lately. Can’t get enough of it, in fact. Probably not very good. Pasta’s pretty processed. Though it’s better than eating … a cheese burger. Haha okay, that was a cop-out rationalization. I’m American, so I’m allowed to do that. Right? Sigh.
Ermagerd though. This dal came out AHmazing. And soo simple. A must-try hearty dinner recipe, for shore. I’m an islander. So bad beach puns are accepted here. Aaaand I’m feeling sassy. Or shall I say, saucy. Because it’s a pasta sauce? idk
Vegan Dal Over Pasta Dinnah!
180 grams penne pasta (1/2 a box, depending)
1 cup dried green or brown lentils, soaked overnight
1/3 cup low-sodium crushed tomatoes (or 2 T tomato paste)
1 clove of garlic, chopped into small pieces
1/4 medium red onion, diced
1 thumb of ginger, grated (or peeled and punctured with a fork a few times to release tha juices: lazy version)
1 t turmeric
1 t cumin
1/2 a cinnamon stick
a few fresh cherry tomatoes, quartered (optional)
some fresh cilantro (optional)
s&p to taste
Add soaked lentils to a sauce pan and cover with water. Add in diced onions and garlic. Bring to a boil and then reduce heat to simmer. Simmer for fifteen minutes, until lentils are close to tender. Add in the rest of the ingredients (besides the pasta, duh!) and cook for an additional 10-15 minutes until the kitchen smells delicious. And the lentils are fully cooked. And dal has soaked up all of the water~ there is no need to drain anything people.
Meanwhile, boil some water for pasta. And then cook da pasta until you like it. I prefer mine just past al dente. I don’t get the love for slightly chewy pasta. I like dat shyt cooked all the way! kay
Drain yo pasta, serve it up in a BIG bowl. A bowl bigger than your face. Like this one here.
Now. Cover your pasta in somma dat simmering delicious dal sauce. But FIRST! Remove the cinnamon stick and garlic clove. And lazy ginger chunk if you decided to do it that way. Trust me, yall don’t want to bite right into that. I forgot to tell my roommate that once. Hehe
